市販食品中のアレルゲン汚染の実態把握を簡易検出キットにより検討した。 小麦アレルゲン簡易検出キットにより小麦非表示食品２５検体を分析したところ、２２検体で陰性、３検体で陽性の結果が得られた（公定法ではこれら３検体を含む４検体が陽性となった）ので、製造工程上でこれらの食品に小麦の混入汚染が起こったものと推測された。 卵アレルゲン簡易検出キットにより卵非表示食品１９検体の試験を行ったところ、すべて陰性の結果を示した。 Two commercially available allergen detection kits, which employ prompt detection tests based on immunochromatographic assay for wheat and egg proteins, were evaluated for detecting these proteins in commercially processed foods. Each kit of Nipponham FASTKIT for detecting wheat and egg proteins was simpler and quicker than each corresponding kit of Rohto Seiyaku Nanotrap for detection, because dilution of the test solutions was unnecessary with the former kits as compared with the latter which showed false negative in some wheat samples and false positive in some egg samples. When testing with the kit of Nipponham FASTKIT for detecting wheat protein，３samples were positive in ２５ wheat-unlabeled samples, although the same３samples plus another one were positive when testing with the Morinaga FASPEK-gliadin specific ELISA kit. When testing with the kit of Nipponham FASTKIT for detecting egg protein, all were negative in １９ egg-unlabeled samples and similar results were obtained when testing with the Morinaga FASPEK- ovalbumin specific ELISA kit. |
